OATMEAL COOKIES RECIPE

I posted a photo of the oatmeal cookies I made on my Instagram page a few weeks back and I got a lot of request for a recipe! Here I am redeeming my pledge. These oatmeal cookies are so filling, so yummy and easy to make. A few oatmeal cookies and tea/coffee in the morning and you are ready to face the day. INGREDIENTS
3/4 Cups Wheat Flour
3/4 Cups Plain Flour/All Purpose Flour
 and 1/4 Cup White Sugar
1 Cup Brown Sugar
1/2 Cup Butter and 1/2 Cup Shortening or 1 Cup Butter
3 Cups Oats
2 Eggs
Handful Raisins
Handful Coconut Shavings
1 Teaspoon Cinnamon
1 Teaspoon Vanilla Essence
1 Teaspoon Baking Soda
1/2 Teaspoon Salt

PREPARATION

  • Preheat Oven to 350 degrees
  • In a large bowl, with a whisk (or by hand) beat butter and shortening (or just butter if you are using only butter) for 40 seconds.
  • Add Sugar, Baking Soda, Salt and Cinnamon to the Butter mix and beat until properly combined.
  • Add Eggs and Vanilla Essence and beat some more 
  • Add Wheat Flour, All Purpose Flour and Oats gradually, and mix with a spatula till well combined.
  • Add Raisins and Coconut Shavings and mix some more.
  • Using a small ice cream scoop or a table spoons, scoop a small amount of dough and place on a baking tray. 
  • Bake for 10 to 15 minutes.
  • Take out of the oven, place on a cooling rack and allow to cool before eating.
