I believe Groundnut Soup is pone of the most underrated soups we have in Nigeria. For a soup so full of flavour, almost addictive and easy to prepare, I wonder why it isn't as popular as Egusi or Okra Soup? My husband has declared that it is his 2nd favourite soup after Egusi and this is coming from someone that does not eat "swallow". There are different versions of Groundnut Soup, even within Nigeria. This version I use is common with Etsakor/Auchi/Edo folk, of course I have made it to suit my taste, more delicious! Try it out!
