HOW TO MAKE COCONUT CUPCAKES!

It was the last day of school for my son Tito about two weeks ago so I decided to surprise his teachers with some coconut cupcakes! These were really nice (If I do say say myself) and I know you will enjoy making them (for when school resumes ;). You know I don't like complicated things, so here's an easy recipe for you to follow, it take less than 45 minutes for you to make this. INGREDIENTS
3 eggs
3/4 cup butter
1/2 teaspoon salt
1 1/4 cup milk
1 cup caster sugar (or blend your sugar till it's almost fine like powder)
21/2 teaspoons baking powder
21/2 cups all purpose flour
1 teaspoon vanilla flavour
1 cup desicated coconut

DIRECTIONS

  • Allow butter and eggs to be at room temperature for at least 30 minutes.
  • Preheat your oven to 350 degrees F and prepare your cupcake papers.
  • In a bowl, add butter and whisk together with a whisk or electronic mixer for 1 minute (till light and fluffy).
  • Gradually add sugar to the butter and keep beating for another minute.
  • Add eggs, one at a time and beat till well combined.
  • Add vanilla essence.
  • Sieve flour, then add it gradually, while also adding the milk. See video on how to do this below. Add 1/2 cup of desiccated coconut. 
  • Once the batter has been properly mixed, use a small scoop and transfer the batter to the cupcake papers, in the cupcake pan.
  • Sprinkle the left over desiccated coconut over the cupcakes 
  • Bake for 10 to 15 minutes.
  • You can test for doneness, but inserting a toothpick, if it comes out sticky, keep baking, if it comes out clean then it is ready.
  • Take out the cupcakes and allow to cook for 10 minutes.

  4. Wow this looks really delicious Bt I usually end up with a stiff cake when I use mixer to mix in the flour is dere anything I am doing wrong? Your chocolate cake recipe is just too good I make it over nd over again thanks a lot.
